Seasonal cuisine at La Guirtelle

A living kitchen

At La Guirtelle, the restaurant is an extension of our home. We offer a seasonal, intimate, and living cuisine, shaped by multiple cultures, crafted through Asian techniques, refined by a French sensibility, and guided by the market and the moment. Everything is cooked on site by the chef, working alone, with particular attention to ingredients, depth of flavour, balance, and simplicity. There is no fixed menu here — the cuisine is always in motion.

Wines in dialogue with the cuisine

The wine list is conceived in the same spirit as the cooking: independent winegrowers, expressive wines, sincere craftsmanship, offered at fair prices. Food and wine pairings are suggested, chosen with restraint to accompany each menu naturally — always in dialogue with the cuisine.

A lived-in home, run by two

La Guirtelle is a home run by two people who live and work on site. The kitchen is led by chef Xiaolin, who has devoted her life to cooking. Her cuisine is guided by experience, intuition, and a deep respect for ingredients and the seasons. The dining room and wine selection are overseen by Michael, a sommelier and wine expert with more than 30 years of experience in the world of wine.

Care for every guest

We have chosen to remain a small, independent, and personal house, in order to welcome each guest with care and sincerity. Due to the way we work and the nature of our cuisine, we kindly ask that you inform us in advance of any dietary restrictions or special requests. Some requests may not be possible on evenings of high attendance. Thank you for your understanding — it allows us to preserve the quality of both the cuisine and the welcome.

Ingredients & Origins

We work closely with trusted producers and suppliers, prioritising quality, seasonality, and proximity. Our everyday ingredients mainly come from local butchers, bakeries, and farms. For certain specific products, and to ensure consistent quality, we also source from Rungis (Paris) and Transgourmet. The Japanese and Asian ingredients essential to our cuisine are selected from specialised reference suppliers, notably Nishikidori and Umami, recognised for their high standards and product traceability. Each ingredient is chosen with care, respecting the product itself, the season, and the balance of flavours.
